In a bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper. Add sliced champignons and marinate for 30 minutes.

Cook lentils according to package instructions. Drain and set aside.

In a blender, blend cashews with water until smooth. Add lemon juice, minced garlic, salt, and black pepper. Blend again.

In a pan, heat olive oil and sauté marinated champignons until golden brown.

Serve sautéed champignons on a bed of cooked lentils. Drizzle cashew sauce on top.
