Mapo Tofu is a popular Sichuan dish known for its numbing and spicy flavors. It is believed to have been created by a pockmarked-faced woman (‘ma’ means pockmarked in Chinese) who served it in her restaurant.

  1. Cut the tofu into small cubes and set aside.
  2. Heat vegetable oil in a wok or pan over medium heat.
  3. Add the ground meat and cook until browned.
  4. Add garlic, ginger, and Sichuan peppercorns. Stir-fry for a minute.
  5. Add doubanjiang and stir-fry for another minute.
  6. Add the tofu cubes and gently stir to combine.
  7. In a separate bowl, mix soy sauce, cornstarch, and water. Pour the mixture into the wok.
  8. Cook for 5 minutes, stirring occasionally.
  9. Garnish with chopped green onions.
  10. Serve hot with rice.
