Mapo Tofu is a popular Sichuan dish known for its numbing and spicy flavors. It is believed to have been created by a pockmarked-faced woman (‘ma’ means pockmarked in Chinese) who served it in her restaurant.

Cut the tofu into small cubes and set aside.

Heat vegetable oil in a wok or pan over medium heat.

Add the ground meat and cook until browned.

Add garlic, ginger, and Sichuan peppercorns. Stir-fry for a minute.

Add doubanjiang and stir-fry for another minute.

Add the tofu cubes and gently stir to combine.

In a separate bowl, mix soy sauce, cornstarch, and water. Pour the mixture into the wok.

Cook for 5 minutes, stirring occasionally.

Garnish with chopped green onions.
