  1. Cut tofu into small cubes. Blanch in boiling water for 2 minutes. Drain and set aside.
  2. Heat vegetable oil in a wok over medium heat. Add Sichuan peppercorns, garlic, ginger, and scallions. Stir-fry until fragrant.
  3. Add ground pork and stir-fry until cooked.
  4. Add doubanjiang and stir-fry for 1 minute.
  5. Add tofu and gently stir to combine.
  6. In a small bowl, mix cornstarch with water to make a slurry. Pour the slurry into the wok and stir gently to thicken the sauce.
  7. Season with soy sauce and salt.
  8. Serve hot with steamed rice.
