  1. Soak the cellophane noodles in hot water for 10 minutes, then drain and set aside.
  2. Cut the firm tofu into small cubes.
  3. Heat vegetable oil in a pan over medium heat.
  4. Add minced garlic, ginger, and Sichuan peppercorns to the pan and stir-fry for 1 minute.
  5. Add chili bean paste and stir-fry for another minute.
  6. Add the cubed tofu and stir-fry for 2-3 minutes.
  7. Add soy sauce and vegetable broth to the pan and bring to a boil.
  8. In a small bowl, mix cornstarch with water to make a slurry.
  9. Add the slurry to the pan and stir until the sauce thickens.
  10. Add the soaked cellophane noodles to the pan and toss until well coated.
  11. Cook for another 2-3 minutes until the noodles are heated through.
  12. Drizzle with sesame oil and garnish with chopped green onions and cilantro.
  13. Serve hot and enjoy!
