Maple-Glazed Tofu with Spaghetti Squash
Spaghetti squash is named for its unique flesh, which separates into spaghetti-like strands when cooked.

Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the halves on a baking sheet, cut side down, and roast for 30 minutes.

While the squash is roasting, prepare the maple glaze. In a small bowl, whisk together the maple syrup, soy sauce, garlic powder, ground ginger, salt, and black pepper.

Cut the tofu into cubes and pat dry with a paper towel. Heat olive oil in a pan over medium heat and add the tofu cubes. Cook for about 5 minutes, until lightly browned.

Pour the maple glaze over the tofu and stir to coat. Cook for an additional 2-3 minutes, until the glaze thickens.

Remove the spaghetti squash from the oven and use a fork to scrape the flesh into spaghetti-like strands.

Divide the spaghetti squash onto plates and top with the maple-glazed tofu. Garnish with sliced green onions and sesame seeds.
