Maple Glazed Delicata Squash
Delicata squash is also known as sweet potato squash due to its creamy texture and sweet flavor.

Preheat the oven to 400°F (200°C). Cut the delicata squash in half lengthwise, scoop out the seeds, and slice into half-moons.

In a bowl, combine maple syrup, olive oil, salt, and black pepper. Toss the delicata squash slices in the maple glaze until evenly coated.

Arrange the squash slices in a single layer on a baking sheet lined with parchment paper. Place fresh thyme sprigs on top.

Roast in the preheated oven for 20-25 minutes, or until the squash is tender and caramelized.

Remove from the oven and let it rest for 5 minutes before serving.
