Peel and chop the ripe mango into small pieces.

In a mixing bowl, combine the chopped mango, coconut flour, cashew butter, curry powder, and honey.

Mix well until a thick dough-like consistency is formed.

Roll the mixture into small truffle-sized balls.

Place the desiccated coconut in a shallow dish.

Roll each truffle ball in the desiccated coconut until coated.

Place the coated truffles on a baking sheet lined with parchment paper.

Chill the truffles in the refrigerator for at least 2 hours.
