  1. Peel and chop the ripe mango into small pieces.
  2. In a mixing bowl, combine the chopped mango, coconut flour, cashew butter, curry powder, and honey.
  3. Mix well until a thick dough-like consistency is formed.
  4. Roll the mixture into small truffle-sized balls.
  5. Place the desiccated coconut in a shallow dish.
  6. Roll each truffle ball in the desiccated coconut until coated.
  7. Place the coated truffles on a baking sheet lined with parchment paper.
  8. Chill the truffles in the refrigerator for at least 2 hours.
  9. Serve chilled and enjoy!
