  1. In a mixing bowl, combine flour, yeast, sugar, and salt. Gradually add water and olive oil, and knead until a smooth dough forms.
  2. Cover the dough with a clean towel and let it rest for 30 minutes.
  3. Preheat the oven to 450°F (230°C).
  4. Divide the dough into 4 equal portions and roll each portion into a thin circle.
  5. Place the dough circles on a baking sheet and spread za'atar evenly over the surface.
  6. Bake in the preheated oven for 8-10 minutes, or until the flatbread is golden brown.
  7. Meanwhile, chop the tomato, cucumber, and mint leaves.
  8. Remove the flatbread from the oven and let it cool for a few minutes.
  9. Top the flatbread with the chopped tomato, cucumber, and mint leaves.
  10. Slice and serve.
