Maitake mushrooms are also known as ‘Hen of the Woods’ due to their resemblance to the fluffed feathers of a nesting hen.

This is vegan, gluten free and high protein recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 13.

  1. Preheat the grill.
  2. Remove the stems from the maitake mushrooms and chop them.
  3. In a pan, sauté the chopped mushroom stems, diced red onion, and minced garlic cloves in olive oil until softened.
  4. In a mixing bowl, combine the sautéed mixture, tamari sauce, ground flaxseed, breadcrumbs, salt, and black pepper.
  5. Form the mixture into burger patties and place them on the preheated grill.
  6. Cook the patties for about 8-10 minutes on each side, or until they are cooked through.
  7. Toast the whole wheat burger buns on the grill.
  8. Assemble the burgers by placing a lettuce leaf, a tomato slice, an avocado slice, and a maitake mushroom patty on each bun.
  9. Serve the Maitake Mushroom Burgers with your favorite condiments and enjoy!
