  3. In a large bowl, combine the mashed sweet potatoes, oat flour, almond flour, coconut sugar, ground cinnamon, baking powder, vanilla extract, coconut oil, raisins, and chopped walnuts. Mix well.
  4. Take spoonfuls of the dough and shape them into cookies. Place them on the prepared baking sheet.
  5. Bake for about 20 minutes, or until the cookies are golden brown.
  6. Remove from the oven and let them cool on a wire rack for 10 minutes.
