  1. Soak the lima beans overnight in water.
  2. Drain and rinse the beans.
  3. In a large pot, heat olive oil over medium heat.
  4. Add chopped onion, garlic, carrot, and celery. Sauté until vegetables are tender.
  5. Add tomato, bay leaf, thyme, salt, and black pepper. Cook for a few minutes.
  6. Add soaked lima beans and vegetable stock. Bring to a boil.
  7. Reduce heat, cover, and simmer for 30 minutes or until beans are tender.
  8. Remove bay leaf and blend the soup until smooth.
  9. Stir in lemon juice.
  10. Serve hot, garnished with fresh parsley.
