  2. Add the tofu and cook until browned, about 5 minutes.
  3. Add the carrot, bell pepper, and water chestnuts. Cook for another 3 minutes.
  4. In a small bowl, whisk together the soy sauce, lime juice, and hoisin sauce. Pour the sauce over the tofu mixture and stir to combine.
  5. Remove from heat and let cool slightly.
  6. To serve, spoon the tofu mixture onto lettuce leaves. Top with fresh cilantro and peanuts.
