Preheat the oven to 325°F (165°C).

In a large mixing bowl, combine the rolled oats, almonds, pumpkin seeds, dried cranberries, and ground cinnamon.

In a separate small bowl, mix together the vanilla extract, maple syrup, and apple sauce.

Pour the wet mixture over the dry ingredients and stir until everything is well coated.

Spread the mixture evenly onto a baking sheet lined with parchment paper.

Bake for 20-25 minutes, or until golden brown and crispy, stirring once halfway through.
