Lentils with Tomatoes
Lentils are one of the oldest cultivated crops and have been a staple in diets around the world for thousands of years.

Rinse the lentils under cold water.

In a large pot, bring water to a boil and add the lentils. Cook for 20 minutes or until tender.

Meanwhile, heat olive oil in a skillet over medium heat. Add the onion and garlic, and cook until softened.

Add the tomatoes, cumin, paprika, salt, and black pepper to the skillet. Stir well and simmer for 10 minutes.

Once the lentils are cooked, drain them and add them to the skillet with the tomato mixture. Cook for an additional 5 minutes.

Remove from heat and stir in fresh parsley and lemon juice.

Let the dish rest for 5 minutes before serving.
