Rinse the lentils under cold water.

In a saucepan, bring 2 cups of water to a boil and add the lentils. Cook for 20-25 minutes until tender.

Meanwhile, chop the red onion, bell pepper, cherry tomatoes, cucumber, and olives.

In a small bowl, whisk together the Dijon mustard, red wine vinegar, olive oil, salt, and black pepper.

Drain the cooked lentils and transfer them to a large mixing bowl. Add the chopped vegetables, crumbled feta cheese, and fresh parsley.

Pour the vinaigrette over the lentil mixture and toss to combine.
