Koshary is considered one of Egypt’s national dishes and is often sold by street vendors.

  1. Rinse the lentils and rice separately.
  2. In a large pot, boil water and cook the lentils until tender. Drain and set aside.
  3. In the same pot, cook the rice according to package instructions. Set aside.
  4. Cook the pasta according to package instructions. Drain and set aside.
  5. In a pan, heat vegetable oil and fry the onions until golden brown. Remove half of the onions and set aside for garnish.
  6. In the same pan, add the garlic and cook until fragrant.
  7. Add the tomato sauce, vinegar, cumin, chili powder, and salt. Cook for a few minutes.
  8. Add the cooked lentils, rice, and pasta to the pan. Mix well.
  9. Serve hot, topped with the reserved fried onions.
