  1. Rinse the lentils and set aside. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic cloves. Sauté until onion becomes translucent. Add lentils, vegetable broth, tomato paste, cumin, paprika, salt, and black pepper to the pot. Stir well. Bring the mixture to a boil, then reduce heat to low and simmer for 30 minutes, or until lentils are tender. Meanwhile, peel and dice the pumpkin or sweet potatoes. Add them to the pot and continue simmering for another 10 minutes, or until the pumpkin or sweet potatoes are cooked through. Remove from heat and let the stew rest for 10 minutes. Serve hot, garnished with fresh parsley.
