Lentil Spinach Soup
Lentils are a great source of plant-based protein and are often used as a meat substitute in vegetarian and vegan dishes.

Heat olive oil in a large pot over medium heat.

Add chopped onion, minced garlic, carrot, and celery. Cook until vegetables are softened.

Add cumin powder, turmeric powder, salt, and black pepper. Stir well.

Add red lentils and vegetable stock. Bring to a boil, then reduce heat and simmer for 20 minutes.

Add spinach and cook for an additional 5 minutes.

Remove from heat and let the soup rest for 5 minutes.

Stir in lemon juice.
