Heat cooking oil in a large pan over medium heat.

Add onion, garlic, and ginger. Saute until fragrant.

Add curry paste and cook for another minute.

Add butternut squash and bell pepper. Stir well.

Pour in coconut milk and bring to a simmer.

Cover and cook for 20 minutes or until butternut squash is tender.

Stir in spinach and lime juice. Cook for another 2 minutes.
