  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat some oil over medium heat.
  3. Add the chopped onion, carrot, celery, and garlic cloves. Sauté until the vegetables are tender.
  4. Add the cumin powder, paprika, turmeric powder, and bay leaf. Stir well.
  5. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil.
  6. Reduce the heat to low and let the soup simmer for about 30 minutes, or until the lentils are cooked through.
  7. In the meantime, cook the red yeast rice according to the package instructions.
  8. Once the lentils are cooked, remove the bay leaf and blend the soup using an immersion blender until smooth.
  9. Stir in the lemon juice, salt, and black pepper.
  10. Serve the lentil soup with a scoop of cooked red yeast rice.
  11. Garnish with fresh cilantro.
