Lentil, Rice, and Raisin Pilaf
Pilaf is a popular dish in Middle Eastern and Mediterranean cuisines, and it is often served as a main course or side dish.

Rinse the lentils and rice separately.

In a large saucepan, heat olive oil over medium heat.

Add the chopped onion and cook until softened.

Add cumin, cinnamon, salt, and black pepper. Stir well.

Add the lentils and vegetable broth to the saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes.

Add the rice to the saucepan and stir well. Cover and simmer for another 15 minutes, or until the rice and lentils are cooked and the liquid is absorbed.

Remove from heat and let it rest for 5 minutes.

Fluff the pilaf with a fork and stir in the raisins and fresh parsley.
