Rinse the lentils and soak them in water for 30 minutes.

In a large pot, heat vegetable oil over medium heat. Add chopped onions, minced garlic, and grated ginger. Sauté until onions are translucent.

Add curry powder, turmeric powder, cumin powder, and coriander powder. Stir well.

Add diced potatoes, soaked lentils, and green peas. Mix everything together.

Pour in coconut milk and chopped tomatoes. Season with salt.

Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the lentils and potatoes are cooked through.
