Cook the green lentils according to package instructions. Drain and set aside.

Preheat the oven to 400°F (200°C). Slice the fennel bulb and red onion. Toss them with olive oil, salt, and black pepper. Roast in the oven for 15-20 minutes until tender.

In a large bowl, combine the cooked lentils, roasted fennel and red onion, cherry tomatoes, diced cucumber, chopped parsley, and chopped mint.

In a small bowl, whisk together the juice of 1 lemon, olive oil, salt, and black pepper. Pour the dressing over the salad and toss to combine.
