  3. Add the chopped potatoes, vegetable broth, bay leaves, thyme, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the potatoes are tender.
  4. Remove the bay leaves from the pot. Use an immersion blender to blend the soup until smooth, or transfer to a blender and blend in batches.
  5. Return the soup to the pot and heat over low heat for a few minutes to warm through.
