Lemon Lentil Stew
Lentils are a great source of plant-based protein and are often used in Mediterranean and Middle Eastern cuisines.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 60 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 14.

Rinse the lentils under cold water and set aside.

In a large pot, heat olive oil over medium heat.

Add the chopped onion, carrots, celery, and minced garlic. Saute for 5 minutes until the vegetables are tender.

Add the cumin, turmeric, paprika, salt, and black pepper. Stir well to coat the vegetables with the spices.

Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the lentils are tender.

Stir in the lemon juice and cook for an additional 5 minutes.

Remove from heat and let the stew rest for 5 minutes.

Serve hot, garnished with fresh cilantro.
