Rinse the rice under cold water until the water runs clear.

In a saucepan, heat olive oil over medium heat. Add garlic and sauté until fragrant.

Add the rinsed rice to the saucepan and stir for a minute.

Add vegetable broth, lemon juice, salt, and black pepper. Bring to a boil.

Reduce heat to low, cover the saucepan, and let it simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.

Remove from heat and let it rest for 5 minutes.

Fluff the rice with a fork and stir in chopped cilantro.
