Preheat the oven to 350°F (175°C). Grease a mini muffin tin.

In a large bowl, combine the flour, chia seeds, baking powder, salt, and lemon zest.

In a separate bowl, whisk together the lemon juice, coconut oil, maple syrup, almond milk, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
