Lemon-Cabbage Rolls

Preheat the oven to 350°F (175°C).

Remove the core from the cabbage and steam the whole head for 10 minutes until the leaves are tender.

Meanwhile, heat olive oil in a pan and sauté garlic, onion, and carrot until softened.

In a large bowl, combine the sautéed vegetables, cooked quinoa, lemon juice, parsley, salt, and black pepper.

Gently separate the cabbage leaves and place a spoonful of the quinoa mixture in each leaf. Roll them up tightly.

Place the rolls in a baking dish, pour vegetable broth over them, and cover with foil.

Bake for 20 minutes, then remove the foil and bake for an additional 10 minutes.
