  2. In a large bowl, combine the whole wheat flour, almond flour, honey, olive oil, vanilla extract, and salt. Mix well until a dough forms.
  3. Fold in the chopped almonds, dried cranberries, and shredded coconut.
  4. Divide the dough into 12 equal portions and shape each portion into a small rectangular bar.
  5. Place the bars on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes, or until golden brown.
  7. Remove from the oven and let the bars cool completely on a wire rack.
  8. Once cooled, store in an airtight container for at least 1 hour to allow the flavors to develop.
