  1. Preheat the oven to 180°C.
  2. Slice the eggplant, zucchini, red bell pepper, and onion into thin rounds.
  3. Sauté the garlic in olive oil until fragrant.
  4. Add the onion and cook until translucent.
  5. Add the red bell pepper and cook for another 5 minutes.
  6. Stir in the tomatoes, salt, and black pepper.
  7. Simmer for 10 minutes.
  8. Layer the sliced vegetables in a baking dish.
  9. Pour the tomato sauce over the vegetables.
  10. Bake for 30 minutes.
  11. Let it rest for 10 minutes before serving.
  12. Garnish with fresh basil leaves.
