Lanae’s Split Pea Soup
Split pea soup has been enjoyed for centuries and is believed to have originated in ancient Greece.

Rinse the split peas and set aside.

In a large pot, heat olive oil over medium heat.

Add the chopped onion, minced garlic, sliced carrots, and diced celery stalks. Cook until vegetables are tender.

Add the split peas, vegetable broth, bay leaves, thyme, salt, and black pepper. Bring to a boil.

Reduce heat to low, cover the pot, and simmer for about 1 hour or until the split peas are soft and tender.

Remove the bay leaves and thyme sprigs.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Serve hot and enjoy!
