Peel and chop the pumpkin, onion, and garlic.

In a large pot, heat olive oil over medium heat and sauté the onion and garlic until fragrant.

Add the chopped pumpkin and cook for 5 minutes.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes or until the pumpkin is tender.

Remove from heat and let it cool slightly. Use an immersion blender or a regular blender to puree the soup until smooth.

Return the soup to the pot and stir in the coconut milk. Season with salt and black pepper.

Simmer for another 5 minutes.
