Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.

Heat oil in a large pan over medium heat. Add cumin seeds, cinnamon stick, and bay leaf. Cook until fragrant.

Add chopped onions, garlic, and ginger. Sauté until the onions are translucent.

Stir in turmeric powder and rice. Cook for a few minutes until the rice is well coated.

Add pineapple chunks, cashews, and raisins. Mix well.

Pour in vegetable broth and season with salt. Bring to a boil, then reduce heat to low. Cover and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

Remove from heat and let it rest for 5 minutes. Fluff the rice with a fork.

Garnish with chopped cilantro and drizzle with lemon juice. Serve hot.
