Blanch the spinach in boiling water for 1 minute. Drain and rinse with cold water. Squeeze out excess water and set aside.

Heat vegetable oil in a pan over medium heat. Add garlic and onion, and sauté until fragrant.

Add carrots and bell peppers, and stir-fry for 2-3 minutes until slightly softened.
