Jiddo’s Fatayer Sabanegh (Spinach Triangles)

Preheat the oven to 180°C (350°F).

In a pan, sauté the onion and garlic in olive oil until translucent.

Add the spinach and cook until wilted.

Remove from heat and stir in lemon juice, sumac, salt, and black pepper.

Lay one sheet of phyllo dough on a clean surface and brush with olive oil.

Place another sheet on top and repeat until you have 6 layers.

Cut the stacked phyllo dough into 6 squares.

Place a spoonful of the spinach mixture in the center of each square.

Fold the phyllo dough over the filling to form a triangle.

Repeat with the remaining phyllo dough and filling.

Place the triangles on a baking sheet and brush with olive oil.

Bake for 20 minutes or until golden brown.

Allow to cool for 10 minutes before serving.
