Heat vegetable oil in a large pan or wok over medium heat.

Add chopped onion, bell pepper, carrot, garlic, thyme, and scotch bonnet pepper to the pan. Stir-fry for 5 minutes until the vegetables are slightly softened.

Add the cabbage and continue stir-frying for another 5 minutes.

Season with salt and black pepper. Stir well to combine.

Reduce the heat to low, cover the pan, and let it cook for an additional 10 minutes.

Remove from heat and let it rest for 5 minutes before serving.
