Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until onion is translucent.

Add carrots, celery, bell pepper, zucchini, and eggplant. Cook for 5 minutes, stirring occasionally.

Stir in the tomatoes, vegetable broth, dried basil, dried oregano, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.

Remove from heat and let the stew rest for 10 minutes.

Serve hot, garnished with fresh basil leaves.
