  2. Slice bitter melon, onion, and garlic.
  3. In a pan, heat cooking oil and sauté garlic until fragrant.
  4. Add bitter melon and onion, and stir fry for 2 minutes.
  5. Push the vegetables to one side of the pan and crack the eggs into the empty space.
  6. Scramble the eggs and mix with the vegetables.
  7. Add tofu, soy sauce, salt, and pepper. Stir fry for another 3-4 minutes.
  8. Remove from heat and let it rest for 5 minutes.
