Bring a pot of water to a boil. Make a small cross-shaped incision on the bottom of each tomato. Blanch the tomatoes in boiling water for about 1 minute, then transfer them to a bowl of ice water.

Peel the skin off the tomatoes and roughly chop them.

In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until the onion becomes translucent.

Add the chopped tomatoes, basil leaves, salt, and black pepper to the pot. Stir well.

Pour in the water and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 1 hour, stirring occasionally.

Remove the pot from heat and let it cool slightly. Use an immersion blender or a regular blender to puree the mixture until smooth.
