  1. Soak the dried white beans in water overnight.
  2. Drain and rinse the soaked beans.
  3. In a large pot, heat olive oil over medium heat.
  4. Add chopped onion, carrot, celery, and minced garlic. Sauté until vegetables are tender.
  5. Stir in tomato paste, cumin, coriander, paprika, salt, and black pepper. Cook for 1-2 minutes.
  6. Add soaked beans, vegetable broth, and water to the pot. Bring to a boil.
  7. Reduce heat to low and simmer for 45-60 minutes, or until beans are tender.
  8. Remove from heat and let the soup rest for 10 minutes.
  9. Garnish with fresh parsley and drizzle with lemon juice.
