  1. Peel and chop the carrots, potatoes, onion, and garlic.
  2. Heat olive oil in a large pot over medium heat.
  3. Add the chopped onion and garlic to the pot and sauté until softened.
  4. Add the chopped carrots and potatoes to the pot and cook for 5 minutes.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce the heat to low and simmer for 20 minutes, or until the carrots and potatoes are tender.
  7. Remove the pot from heat and let it cool slightly.
  8. Use an immersion blender or a regular blender to puree the soup until smooth.
  9. Return the soup to the pot and stir in the coconut milk.
  10. Season with salt and black pepper to taste.
  11. Simmer the soup for another 5 minutes.
  12. Serve hot, garnished with fresh parsley.
