Bring a pot of water to boil and blanch the green beans for 3-4 minutes until crisp-tender.

Drain the beans and immediately transfer them to an ice bath to stop the cooking process.

In a large bowl, combine the blanched green beans, chopped fresh mint leaves, thinly sliced red onion, lemon juice, olive oil, salt, and black pepper.

Toss everything together until well combined.

Let the salad rest for 10 minutes to allow the flavors to meld.
