In a bowl, soak tamarind pulp in water for 10 minutes. Strain and set aside the tamarind juice.

Heat vegetable oil in a large pot over medium heat. Add garlic, shallots, and red chili peppers. Sauté until fragrant.

Add long beans, corn kernels, carrots, cabbage, and tomatoes. Stir fry for 5 minutes.

Pour in the tamarind juice and vegetable broth. Bring to a boil and simmer for 15 minutes.

Add tofu, salt, and sugar. Cook for another 5 minutes.

Remove from heat and stir in lime juice.

Serve hot, garnished with fresh cilantro.
