Preheat the oven to 350°F (175°C).

In a large bowl, mix together the all-purpose flour, shredded coconut, baking powder, salt, and sugar.

Add the coconut milk, vegetable oil, and vanilla extract to the dry ingredients. Stir until well combined.

Grease a loaf pan with oil and pour the batter into it.

Bake in the preheated oven for 25 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it rest for 5 minutes.

Slice and serve warm.
