  1. Preheat the oven to 180°C (350°F).
  2. Cut the eggplants in half lengthwise and scoop out the flesh, leaving a shell.
  3. Chop the eggplant flesh and set aside.
  4. In a pan, heat olive oil and sauté onions until translucent.
  5. Add minced garlic and chopped eggplant flesh to the pan and cook until softened.
  6. Add diced tomatoes, parsley, salt, black pepper, and sugar to the pan. Cook for another 5 minutes.
  7. Stuff the eggplant shells with the mixture and place them in a baking dish.
  8. Drizzle olive oil over the stuffed eggplants.
  9. Bake in the preheated oven for 45-50 minutes.
  10. Let it rest for 10 minutes before serving.
  11. Serve hot and enjoy!
