Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.

In a mixing bowl, combine the all-purpose flour, carob powder, baking powder, and salt.

In a separate bowl, whisk together the coconut oil, maple syrup, and vanilla extract.

Gradually add the wet ingredients to the dry ingredients, mixing until well combined.

Roll the dough into small balls and place them on the prepared baking sheet. Flatten each ball slightly with the back of a spoon.
