  2. Cut a small slit on the flat side of each chestnut.
  3. Place the chestnuts on a baking sheet and roast them in the oven for about 20 minutes.
  4. Remove the chestnuts from the oven and let them cool slightly.
  5. Peel the chestnuts while they are still warm.
  6. In a saucepan, combine the peeled chestnuts, sugar, water, vanilla extract, and salt.
  7. Cook over medium heat, stirring occasionally, until the chestnuts are soft and the liquid has thickened, about 10 minutes.
  8. Remove from heat and let the mixture cool slightly.
  9. Transfer the mixture to a blender or food processor and blend until smooth.
  10. Allow the chestnut spread to cool completely before transferring it to a jar.
