In a large bowl, combine the flour, whole wheat flour, sesame seeds, flax seeds, chia seeds, dried herbs, olive oil, water, and salt. Mix well until a dough forms.

On a lightly floured surface, roll out the dough to about 1/8 inch thickness.

Using a sharp knife or pizza cutter, cut the dough into small squares or desired shapes.

Transfer the crackers to a baking sheet lined with parchment paper.
