  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, salt, and dried herbs.
  3. In a separate bowl, mix together the buttermilk, honey, and olive oil.
  4. Gradually add the wet ingredients to the dry ingredients and mix until a dough forms.
  5. Turn the dough out onto a lightly floured surface and knead for a few minutes until smooth.
  6. Shape the dough into a round loaf and place it on the prepared baking sheet.
  7. Use a sharp knife to score a cross on the top of the loaf.
