Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, salt, and dried herbs.

In a separate bowl, mix together the buttermilk, honey, and olive oil.

Gradually add the wet ingredients to the dry ingredients and mix until a dough forms.

Turn the dough out onto a lightly floured surface and knead for a few minutes until smooth.

Shape the dough into a round loaf and place it on the prepared baking sheet.

Use a sharp knife to score a cross on the top of the loaf.

Bake for 35-40 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
