Rinse the rice under cold water until the water runs clear.

In a large pot, heat the olive oil over medium heat. Add the onion, green bell pepper, and garlic cloves. Cook until softened.

Add the sofrito and sauté for a minute.

Stir in the rice, pigeon peas, sazón seasoning, salt, and water. Bring to a boil.

Reduce the heat to low, cover, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.

Remove from heat and let it rest for 5 minutes before fluffing with a fork.
